Grilled Chicken Breast with Emeril's Kicked-Up Bam B Q Sauce
4 whole, boneless chicken breasts, skin-on
(about 10 to 12 ounces each)
2 tablespoons Emeril's
Chicken Rub
3 tablespoons olive oil
1 to 1 1/2 cups Emeril's
Kicked-Up Bam B Q Sauce
Preheat the grill to medium-heat, about 350ºF.
Rinse the chicken breasts under cold running water and pat dry with paper
towels. In a small bowl combine the Emeril's Chicken Rub and the olive
oil to form a paste. Rub the paste onto the chicken breasts, both sides and lay
them on the grill skin-side down. Cook the chicken for 7 to 9 minutes on the
first side. Turn the chicken over, and brush generously with the Emeril's
Kicked-Up Bam B Q Sauce. Continue to cook the chicken for an additional 7
to 9 minutes, turn over and brush with more Bam B Q Sauce. To
check for doneness, pierce the thickest portion of the chicken breast, and it
should be completely white with no trace of pink.
