Olio Di Melli Balsamic Vinegars are a perfect balance of intensely
sweet and acidic. They are aged first in
oak barrels and then depending on the age of the balsamic are transferred to
Cherry wood and a variety of flavored wood barrels for various lengths of time,
to achieve a complexity of flavors.
Their three year old balsamic is the
Bordeaux Label and is perfect
vinegar for salads. The grapes used by
the producers are the Trebiano, Lambrusco, and San Giovese grapes. Perfectly ripened grapes are boiled down to
a must, in a cauldron over an open fire.
The grape must is then placed in an oak wood barrel where it ages for 3
years. The balance of acid with pure,
clean sweetness blends wonderfully with a variety of lettuces and slightly
steamed fresh vegetables.
Their eight to ten year old balsamic is labeled
Farmacia Bordeaux. After spending three years in
the oak wood barrel the balsamic is transferred into cherry and other flavored
wood barrels for approximately five to seven
years. It is sweeter and more
viscous than the younger vinegar - perfect for making sauces and balsamic
reductions. Use it as a condiment to
drizzle over meat, seafood and vegetables. This
vinegar would also be recommended for fruit-based salads.
Their ten to twelve year old
balsamic is known as Farmacia Oro.
After spending its first three years in the oak wood barrels the
balsamic is transferred to cherry and several other
flavored wood barrels, such as ash, chestnut, and mullberry.
It is intensely sweet and thick - a perfect balance of sweet and sour.
This is the balsamic to be used on ice cream, fresh strawberries,
peaches, or pears before roasting. It
may also be used for sauces and reductions.
