Perfection Chicken
You can eat this hot or
cold, in salads, wraps or on a bed of rice. It is an easy and versatile
dish.
2 boneless, skinless chicken breasts
1 tsp. olive oil
3 Tbs. Perfection Spice Rub
1/2 lemon or orange (optional)
Preheat oven to 350.
Cut chicken breasts into chunks, about 1 inch cubes.
In a bowl, combine the olive oil and chicken.
Add Perfection Spice Rub, 1 tbsp. at a time, tossing in between each
addition to coat the chicken.
Spread the chicken in a single layer in a lightly oiled baking dish.
Squeeze fresh lemon or orange over the chicken.
Bake, covered, for 35 minutes. |
