Roasted Tomato Bruschetta




8 plum tomatoes, chopped
4 cloves garlic, minced
2 tablespoons Emeril's Italian Essence
3 tablespoons olive oil
1/2 teaspoon salt
1/2 cup shredded Parmesan cheese or goat cheese
12 slices toasted French bread
chopped basil leaves
 

In large roasting pan, combine tomatoes, garlic, Essence, olive oil, and salt.  Toss gently and bake at 375 degrees F for 25 minutes or until slightly browned.  Serve on toasted French bread, sprinkle with basil leaves, cheese and additional olive oil, if desired.

Makes 4 servings.
