Chicken Satay
with Asian Peanut Sauce
1 cup Emeril's Asian
Basting Sauce
2 tablespoons peanut butter
2 tablespoons lime juice
1 tablespoon soy sauce
1/2 teaspoon ground ginger
1/3 cup chopped cilantro
3 tablespoons Emeril's Kick
It Up Green Pepper Sauce
1 pound boneless, skinless chicken breasts cut into strips
2 tablespoons toasted sesame seeds
Combine all ingredients except chicken and sesame seeds. Set aside one
half mixture. Thread chicken pieces on skewers. Grill or broil
chicken 10 minutes or until chicken is cooked through, basting frequently with
sauce. Remove from grill and sprinkle sesame seeds over chicken.
Heat remaining sauce and serve with chicken.
Makes 4 servings.
