Johnny Cakes are a famous Rhode Island tradition
and were one of the first foods introduced to the Pilgrims by the Indians, and
remain a staple of Rhode Island cuisine. Not found in many other parts of the
country, Johnny cakes are ground, white corn cooked on a griddle, much like a
pancake, but with a heartier consistency. The controversy over the proper
way to cook them has been heated and ongoing for years. Thin and crisp or thick
with a crusty outside? Drizzle with butter and syrup or eat plain? Decide for
yourself! Johnny Cakes, a mixture of white corn meal with a dash of sugar and
salt, combined with liquid and fried on a griddle is not the only use for this
meal. Make tasty corn bread, pancakes or use as a breading. Recipes included on
each package. Kenyon's has made Johnny cake mix for more than 100 years, and is what most Rhode Islander's grew up with. Now, they won't settle for anything less.
